Theory:
The colloidal state. Theory of kinetic stability. Coagulation kinetics. Electrostatic stabilization. Zeta-potential. Steric stabilization. Surface active compounds and surface activity.
Experimental:
Discuss the composition of a commercially available colloidal product (what compounds are present and for what reasons) in a written report.

Goals
To understand the differences between thermodynamic stable solutions and kinetic stable dispersions. To have knowledge of the basics of kinetic stability and the colloidal state. To have a basic knowledge of surface active compounds and the influence of the latter upon the colloidal state. The goal of the course is not only focused on the fundamental origing of colloidal properties and surface phenomena, but also deals with the explanation of the impact of these features on technological processes.
Learning outcomes
- Knowledge of basic phenomena that influence the preparation, characterization and stabilization of dispersions (e.g. emulsions, suspensions and liposomal dispersions).
- Knowledge of the difference between thermodynamic and kinetic stability and being able to illustrate this with a variety of examples.
- Know the difference and balance of attractive destabilising forces and repulsive (elektrostatic, steric and electrosteric) stabilizing forces.
- Knowledge of determining factors that influence the properties of surface active compounds. - Be able to comprehend the relationship between composition and functionality of ingredients in dispersions.
